Flaming Brian's Kitchen: Blazin' Buffalo Sauce

Step into Flaming Brian's Kitchen in this Spin Off series, as we test out different hot sauces and spicy foods.  First up, it's Blazin' Buffalo Sauce, the hottest level of sauce from Buffalo Wild Wings.

    Here's one I recommend. Professor Phardtpounder's Colon Cleaner. Despite the nutty name it's a great mustard-based sauce. Goes really well with hot dogs and polish sausages.

    Comparing to The Source (just dilute capsaicin) isn't really valid; that stuff is used to flavor commercial batches of hot food. 200,000 Scoville heat units is actually hotter than most peppers you can find in a regular supermarket (habaneros are around 100,000-350,000SHU, and Thai bird chillies are around 50,000-150,000; for comparison, jalapenos are 8,000-15,000), and I don't know anyone who'd eat a habanero or bird's eye chili straight.

    Also, fun fact, capsaicin isn't very soluble in water, but is very soluble in alcohol. So, after eating something too hot, but before going after the dairy, try swishing with some vodka. (Don't swallow or gargle; that'll just collect capsaicin in just the right place to blow it up your nose.) Also, there's four things milk does to help you:
    1) It's cold, which temporarily soothes your tongue, since your nerves register capsaicin as heat
    2) It has some sugar, which is a mild capsaicin reception blocker
    3) It has some fat, which bonds to the capsaicin and carries it off down your throat (capsaicin is soluble in fat)
    4) Casein (AKA milk protein) bonds to fat (which dissolves capsaicin) and to capsaicin itself, keeping it away from your taste buds

    Do yourself a favor, maximize the four: Use ice cream.

    And finally, although I don't think it's quite as hot as this was (I can handle a small amount straight), you might want to give Sriracha sauce (http://en.wikipedia.org/wiki/Sriracha_sauce) a try. It's basically generic Thai hot sauce

    A good otsauce that I actualy use to spice up eggs (ala tabasco) is FEAR. It's made with Naga Jolokia peppers. It's very hot but it also has a good taste to it

    The Source is hotter than most pepper sprays. Not something made to be taken straight as it can cause permanent damage to your sense of taste. Once you start hitting things that hight, they're made as additives to sauces.

    Now I'm a fan of heat, and once you're used to it, some of the hotter peppers do have a wonderful flavour. Things like that however are there just for the sake of heat. I don't see much purpose in them. If you want to make something hot, find a good pepper and bring flavour at the same time.

Mixing cheese with hot spicy food, dulls the spice out. For best effect, drink warm water to take the heat out. If you want to make it heat up just a little bit more, smoke a cigarette after spicy food, the smoke seems to amplify the heat a bit more. By the way I eat Habaneros like candy, which is how I know this stuff.
